This week, we’d like you to meet Monica Anderson from the Elysia Root Cakes team. Despite being the youngest person in the kitchen, she has some serious skills when it comes to cake decorating. Monica graduated from Kendall College in 2012, and after working at various local Chicago bakeries, she became part of our team in February 2014. Monica and her random anecdotes have us convinced that she should start a YouTube channel so that all the world can be as entertained as we are on a daily basis. We are grateful to have such a talented and hilarious person on our team! Read on to find out a little bit more about her, and to check out some photos of her and some of her favorite cakes that she has made!
What is your favorite cake you’ve ever done? My grandma’s 80th birthday cake. It was a simple single tier but I painted a cat on top, which my grandma loved.
Does it bother you when people eat the cakes you’ve put so much effort into? Not at all! It is just as important for a cake to taste great as well as look amazing.
Are there any cake artists you admire? Sylvia Weinstock, Maggie Austin, Ron Ben Israel, Mike McCarey, and Alexandria Pellegrino of Cake Opera.
What’s something that most people don’t know about you? I have been a vegetarian for ten years.
If you didn’t make cakes, what would you do for a living? I love animals, especially sea mammals, so I would probably be a marine biologist.

What are your favorite spots in Chicago? Any rooftop bar, the lake front path and the lily pad ponds by the Lincoln Park Zoo.
Do you have any advice for pastry students looking to become cake decorators? Practice, practice, practice! It’s a lot of hard work but it pays off when you have a happy customer. Beauty is in the details!
